Enchiladas

Boil and shred Chicken. Cook and season Hamburger.
Fill a small frying pan with oil, once oil is warm warm Tortillas until almost crispy. 
Cover tortillas in enchilada Sauce. Put Meat and cheese in. put in baking pan once pan is full cover in remaining enchilada sauce and cheese and bake until cheese is melted

Pickle Dip

  • 1 Jar Dill Pickles
  • 1 Yellow Onion
  • 1 Container Sour Cream
  • Lemon Pepper
  • Pickle Juice


Dice Pickles and Onion. Combine all Ingredients to taste.

Green Enchilada Sauce

  • 2 Pieces of Garlic
  • 1 Bushel of Cilantro
  • 8 Medium Tomatillos
  • Chicken Bouillon (knorr brand is best)
  • 1 Dry Jalapeno 
  • Water
Boil Tomatillos until yellowish then blend them( sometimes causes lid to come off blender). Add Garlic Cloves, and Cilantro. Blend until smooth. Add Bouillon to taste. transfer to pot and cook on low heat for 20 min or until desired taste.

Barf Salad

  • 1 Tub Cottage Cheese
  • 1 Tub Whip Cream
  • 1 Bag Frozen Raspberries
  • 2 Boxes Raspberry Jello
Mix Together! Best served right after made while raspberries are still frozen

Mango Sticky Rice

  • 1/2 can of coconut milk
  • water (make 2 1/2 C liquid when combined with coconut milk)
  • 4 C sticky rice, cooked
  • 3/4 C sugar
  • 1 t salt (1 1/2 maybe)
  • sliced mango

Heat coconut milk and water, add rice, sugar, salt until it thickens to a pudding consistency. Serve warm with sliced Mango on top

Thai Sticky Rice

Thai Sticky Rice is a special kind of rice only found at some asian food stores. It has a very solid white color to it , not clearish like normal rice.

Wikipedia Says "Glutinous rice (Oryza sativa var. glutinosa or Oryza glutinosa; also called sticky ricesweet ricewaxy ricebotan ricebiroin chalmochi rice, and pearl rice) is a type of short-grained Asianrice that is especially sticky when cooked. It is called glutinous (< Latin glūtinōsus) in the sense of being glue-like or sticky and not in the sense of containing gluten; on the other hand, it is called sticky but should not be confused with the other varieties of Asian rice that become sticky to one degree or another when cooked."

Thai Sticky Rice
Steaming Pot and Basket

So once you have the rice it is easiest to cook it in a pot with a basket made for cooking it.
Soak Rice for 1 day in water.
Assuming you have both the rice and the pot, you fill the pot with a couple inches of water (shouldn't touch basket when boiling). Put basket in the pot and rice in the basket with a lid over the rice. You want to cook the rice until it is translucent and sticky to its self but not too sticky to the touch.

Nam Thok - Waterfall

All Ingredients are approximate


  • London Broil Round Steak or some type of thick steak
  • salt
  • 2t Fish Sauce
  • 1/3 C fresh squeezed lime juice
  • 1/4 C shallots cut to strips
  • 2 T green onion
  • 1 T mint
  • 2 T cilantro
  • 2 T “Cow Coo Uh” - Phonetic spelling .Ground up uncooked sticky rice.
  • Water to maintain sauce
  • sugar & Salt to  Taste
  • ground chili powder from Asian Market
  • BEST SERVED WITH  THAI STICKY RICE (link)


    Pat down the steak with a good crust of salt. The steak should be moderately thick and able to handle a lot of salt. BBQ it to medium rare, then cut into thin strips. (Again, think stir fry).

    In a pot start with lime juice, fish sauce, water and salt. Add meat to finish cooking (from medium rare to medium well/well) add other ingredients making a soupy stir fry. Serve over sticky rice. By the way, be careful with the chili powder as it will add heat!
